The fat obtained from the fruit of the olive tree is called olive oil. It is a traditional tree crop in the Mediterranean region. The oil is produced from pressing olives. It is used in cooking, pharmaceuticals, cosmetics and soaps. It is also used in traditional lamps. 

Greeks consume more olive oil than any other country, on average of about 24 liters per person. Spaniards and Italians consume about 15 and 13 liters per person respectively.

There are many varieties of olive oil as there are hundreds of cultivars of the olive plant. Some are well known like the Arbequina variety (found in Spain), while others are not so well known, like the Barnea variety.

Problems like hypertension, stroke and hyperlipidemia are also less common among olive oil takers. The oil has anti-atherogenic properties which makes it beneficial for the heart. This property prevents the hardening of the arteries and development of atherosclerosis.

2. Olive oil has a perceptible positive impact on those with depression. The number of people who report depression is especially low among olive oil consumers. Researchers say that the oil reduces the concentration of trans-fat in the body, which leads to lower levels of depression.

in a way no other vegetable oil is known to do.
